Blackberry Basil Lemonade

Ah, the sweet joys of summer. Temps in the high 90s, humidity that makes your hair stand on end, vicious little mosquitoes.

Alright, maybe those aren’t the highlights of summer. But if the humidity has got your hair in a tizzy or the heat has worn you down, I’m here to save the day by offering a refreshing way to cope.

Blackberry Basil lemonade

Y’all. This is a game changer. Lemonade is a must for the dreaded hot days of summer, but adding blackberries and basil? Lemons never had it so good. Continue reading “Blackberry Basil Lemonade”

Homemade Pound Cake with Whipped Cream & Mulberries

Last week Phill came home from work excited to share what he had harvested from the grounds of his office. Out of his lunch bag he pulled out a small container of mulberries.

Before he came home with fresh fruit to taste, my knowledge of mulberries stemmed from the nursery rhyme we sang as children “Here we go ’round the mulberry bush, the mulberry bush…” I had never seen a mulberry, or, frankly, thought much of them.

It turns out that mulberries are delicious. They are almost like a blackberry, but smaller and sweeter. So sweet, that Simon ate them by the fistful, stem and all. Continue reading “Homemade Pound Cake with Whipped Cream & Mulberries”

Spicy Lemon Chicken Pasta with Garden Tomatoes and Basil

We’ve reached the end of August and summer is still going strong. Even though I’m longing for sweater weather, the extended heat is allowing our garden to continue thriving. After a slow start, our tomato plants have finally taken off and our kitchen is full of little orange globes bursting with summer sweetness.

Our cherry tomato plants, in particular, have taken over the garden. No matter how I try to support them, it seems they outgrow the space they’ve been given within minutes of being re-staked. These overgrown plants have given us dozens of tomatoes in the past couple weeks, and we’ve had to adjust our dinner menus accordingly. Classic Summer Potato Salad

A summertime barbecue is not complete without a classic summer potato salad. Because, let’s be honest with ourselves, what do we actually want beside our bratwurst and burgers? Carbs, in potato form.

This past Saturday was a productive (and hectic) day for our family.Earlier in the spring I decided it would be a good idea to run a half marathon in the fall, which meant I had to run. for multiple miles. yikes! After a taxing, but fulfilling, five miles, we got to work on our list of “to do’s” including canning more strawberry jam, making strawberry and mango fruit leather, dehydrating limes for zest, and trying to figure out what pesty creatures were taking over my squash plants. In the midst of all this, friends of ours reached out for a game night. Continue reading “Classic Summer Potato Salad”

Bacon, Pea, Alfredo Lasagna

Now that it’s really cold outside, I want to eat pasta all of the time. And, you know, I’m seven months pregnant so nothing sounds better than carbs and cheese.

This week we made lasagna – but we mixed it up a bit. We traded in your typical red sauce for alfredo and swapped out the filling for a creamy pea and bacon mixture. This recipe originally came from a cookbook we have called Poor Girl Gourmet, but after making it a few times, I’ve tweaked it to fit our tastes. Continue reading “Bacon, Pea, Alfredo Lasagna”

Homemade Pasta

I love digging into a plate of pasta. Part of that stems from my love of carbs (and really, who doesn’t love carbs?). And the other part of that stems from the fact that my father is Italian.

Well, he thinks he is, at least.

Growing up we ate pasta at least once, if not twice a week. But now, my parents have limited their carb intake and my sister was diagnosed with celiacs (aka gluten intolerance). Thankfully, I’m married with my own family and I can make pasta as often as I please — which is a lot, especially now that I’m pregnant with baby #2 (six months down, three to go!).
